This Rice Noodles with Pork and Peanut Sauce recipe
is a quick and easy and very tasty pasta dish that all ages will enjoy! Bite-size chunks of tender and lean ground pork are stir-fried until lightly browned, then tossed with rice noodles along with some thinly sliced onions and mustard greens. The pork and pasta are then tossed with a very flavorful peanut sauce made with soy sauce, chicken broth, creamy peanut butter, hoisin sauce and a small amount of sugar, giving this pasta dish the perfect flavor compliment. If you'd like to a little crunch and more peanut flavor, you can do so simply by using crunchy peanut butter instead of creamy. For even more crunch and peanut flavor, you can also add 1/3 cup of peanuts. This recipe makes 4 large servings or 6 modest servings.

Ingredients
- Peanut Sauce
- 1/4 cup soy sauce
- 1/4 cup chicken broth
- 2 tablespoons creamy peanut butter
- 2 tablespoons hoisin sauce
- 2 teaspoons sugar
- Pork
- 3 tablespoons oil
- 1 lb. lean ground pork, pinched into 3/4 to 1-inch lumps
- 6-8 oz. rice noodles (also called rice sticks)
- about 4 quarts of water
- 4 cloves garlic, minced
- 1 medium onion, thinly sliced lengthwise
- 1 1/2 cups lightly-packed slivered mustard greens
Directions
In a small bowl, whisk together all Peanut Sauce ingredients. Set aside.
Heat water to boiling in a large pot. While water is heating, begin cooking pork: Place a large skillet or wok over high heat. When skillet or wok is hot, add 2 tablespoons of the oil. When the oil is hot, add pork and stir-fry until lightly browned (about 5 minutes) being careful not to break up pork pieces.
When water for rice comes to a boil, add rice noodles and cook for 2-4 minutes or until barely tender to the bite. While rice noodles are cooking, add to pork the garlic, onion, 1 cup of the mustard greens and peanut sauce and mix well. Remove from heat.
Drain noodles in colander, then add noodles to pork mixture and thoroughly combine. Cut noodles with scissors if you have difficulty stirring. Transfer to serving plates and garnish with remaining mustard greens.
