Rice Noodles with Pork and Peanut Sauce
Yield: 4-6 servings
Cook Time: 5-10 minutes
Tips: Add 1/3 cup peanuts for added crunch and more peanut flavor.
Suggestion: Delicious served with a vegetable side.
Ingredients
- Peanut Sauce (ingredients listed below)
- 3 tablespoons oil
- 1 lb. lean ground pork, pinched into 3/4 to 1-inch lumps
- 6-8 oz. rice noodles (also called rice sticks)
- about 4 quarts of water
- 4 cloves garlic, minced
- 1 medium onion, thinly sliced lengthwise
- 1 1/2 cups lightly-packed slivered mustard greens
- Peanut Sauce
- 1/4 cup soy sauce
- 1/4 cup chicken broth
- 2 tablespoons creamy peanut butter
- 2 tablespoons hoisin sauce
- 2 teaspoons sugar
Directions
In a small bowl, whisk together all Peanut Sauce ingredients. Set aside.
Heat water to boiling in a large pot. While water is heating, begin cooking pork: Place a large skillet or wok over high heat. When skillet or wok is hot, add 2 tablespoons of the oil. When the oil is hot, add pork and stir-fry until lightly browned (about 5 minutes) being careful not to break up pork pieces.
When water for rice comes to a boil, add rice noodles and cook for 2-4 minutes or until barely tender to the bite. While rice noodles are cooking, add to pork the garlic, onion, 1 cup of the mustard greens and peanut sauce and mix well. Remove from heat.
Drain noodles in colander, then add noodles to pork mixture and thoroughly combine. Cut noodles with scissors if you have difficulty stirring. Transfer to serving plates and garnish with remaining mustard greens.
