Coconut Curry Noodles is a mildly flavored pasta recipe made with chow mein noodles, and is great served as a side dish to a large variety
of main courses. This pasta dish is also delicious served as a filler ingredient, such as with Lettuce Wraps (butter lettuce wrapped around grilled chicken and vegetables as well as cocounut curry noodles, served wtih assorted dipping sauces).

This pasta dish has a mild yet distinctive and pleasing flavor and is made with coconut milk, garlic, chicken stock, curry powder, fish sauce and freshly squeezed lime and lemon juice. These tender noodles serve as a side dish for most any meat, chicken or fish, and will accompany most any Asian or Stir-Fry dish beautifully. The photo above shows Coconut Curry Noodles made with Chow Mein noodles, but you can also use spaghetti, fettuccine, or any other slender, long noodles, if desired.
