Tips:   Fillets can be marinated overnight, if desired. Lining baking pan with aluminum foil will make clean-up much easier.

Honey Ginger Salmon celebrates salmon with an unexpected and delicious sweet and tangy flavor! Salmon fillets are first marinated in a sauce made
with soy sauce, grated fresh ginger root, honey, white wine and fresnly squeezed lemon juice. The filets are baked for 15 minutes, then coated with a brown sugar and butter glaze and briefly broiled until the glaze thickens and turns bubbly.

This dish is super easy to make, and cooks in 20 minutes. Simply prepare the marinade about 2 hours before you're ready to bake, and this salmon recipe becomes virtually effortless. If preferred, you can also marinate the salmon fillets overnight, so all that's remaining the following day is a quick preparation of the brown sugar and butter glaze you'll apply in the last 5 minutes of cooking. The sweetness of the glaze and the tanginess of the marinade compliment each other nicely, producing colorful flavors, not to mention tender and flaky salmon fillets!

Ingredients

  • 1 1/2 lbs. salmon, cut into four fillets

  • Marinade
  • 2 tablespoons soy sauce
  • 1 tablespoon minced or grated fresh ginger root
  • 1 tablespoon white wine
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • pinch of salt and pepper

  • Glaze
  • 4 tablespoons (1/2 stick) butter
  • 1/4 cup packed light brown sugar

Directions

Marinade
In a small mixing bowl, whisk together ingredients. Place salmon fillets in a medium bowl or other large container and pour marinade evenly over the top. Cover and refrigerate for 2 hours (or overnight).

Preheat oven to 375° F.

Transfer the fillets to a baking pan and place in the oven for 15 minutes. (Tip: Lining baking pan with aluminum foil will make clean-up much easier.) Remove from oven change oven setting to broil. Prepare glaze (recipe follows).

Glaze
Melt butter and mix with brown sugar in a small mixing bowl. Apply glaze to tops and sides of fillets with a spoon. Return fillets to oven, placing directly under the broiler. Broil for about 5 minutes or until glaze begins to thicken and bubble.
