Honey Ginger Salmon

Cook Time: 20 minutes
Tips: Fillets can be marinated overnight, if desired. Lining baking pan with aluminum foil will make clean-up much easier.
Ingredients
- 1 1/2 lbs. salmon, cut into four fillets
- Marinade
- 2 tablespoons soy sauce
- 1 tablespoon minced or grated fresh ginger root
- 1 tablespoon white wine
- 1 tablespoon lemon juice
- 2 tablespoons honey
- pinch of salt and pepper
- Glaze
- 4 tablespoons (1/2 stick) butter
- 1/4 cup packed light brown sugar
Directions
Marinade
In a small mixing bowl, whisk together ingredients. Place salmon fillets in a medium bowl or other large container and pour marinade evenly over the top. Cover and refrigerate for 2 hours (or overnight).
Preheat oven to 375° F.
Transfer the fillets to a baking pan and place in the oven for 15 minutes. (Tip: Lining baking pan with aluminum foil will make clean up much easier.) Remove from oven change oven setting to broil. Prepare glaze (recipe follows).
Glaze
Melt butter and mix with brown sugar in a small mixing bowl. Apply glaze to tops and sides of fillets with a spoon. Return fillets to oven, placing directly under the broiler. Broil for about 5 minutes or until glaze begins to thicken and bubble.
