Tips:   More (or less) Parmesan cheese may be added, if desired. For variety, shredded chicken breast, broccoli and/or marinated artichoke hearts may also be tossed in with the fettuccine noodles.

Fettuccine Alfredo began as a simple sauce made from butter and Parmesan cheese that provided a rich coating for pasta, and derived its name from a restaurateur in Rome. Since then, Fettuccine
Alfredo recipes have expanded to a variety of preparations, often using heavy cream to add richness and flavor, as well as egg.

This Sour Cream Fettuccine recipe begins with the now popular Fettuccine Alfredo ingredients of heavy cream (whipping cream), butter and Parmesan, and adds a generous amount of sour cream, giving it a slightly thicker consistency while adding a hint of sourness (heavy cream tends to have a sweeter taste).

You can adjust this creamy and cheesy sauce to your own taste, simply by increasing or decreasing the amount of Parmesan cheese you add. You can also customize this fettuccine recipe further by adding any number of ingredients, such as chicken, broccoli, shrimp and/or artichoke hearts (or any other ingredient that sounds appealing to you).

Ingredients

  • 1 lb. fettuccine noodles
  • 1 cup sour cream
  • 1 cup whipping cream
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese (or more or less, if desired)
  • salt and pepper to taste
  • additional Parmesan cheese (for topping, if desired)
  • finely chopped flat-leaf Italian parsley (for garnishing, if desired)

Directions

Cook fettuccine according to package instructions and drain. While fettuccine noodles are cooking, add sour cream, whipping cream and butter to a saucepan. Heat on low-medium, being careful not to boil. Add Parmesan cheese and season to taste with salt and pepper. Pour sauce over hot fettuccine noodles and toss. Sprinkle with additional Parmesan cheese and garnish with finely chopped parsley if desired.
