Easy Taco Casserole with Tortilla Chips

Tips: Ground turkey, ground chicken, ground pork or ground beef may be used.

Who doesn't love those easy family dinners that feature ingredients and flavors that everyone in the family enjoys? This easy taco casserole with tortilla chips recipe begins with any type of ground meat you prefer; whether it be beef, chicken, turkey or pork. The ground meat is cooked in a skillet until browned, then taco seasoning is stirred in, along with a can of pinto beans, a can of corn kernels (yellow or white) a can of tomato sauce. This simple
yet tasty mixture is poured into a casserole dish and topped with a generous amount of shredded cheddar cheese. Broken tortilla chips (you can make the pieces large or small) are sprinkled over the top, and a little more cheddar cheese is sprinkled on top of the chips. This easy casserole bakes in only 15 minutes and makes a terrific family dinner.
Once baked, serve this casserole with your choice of chopped tomatoes, sliced avocadoes, dollops of sour cream, sliced green onions and/or hot pepper sauce, and you've got a complete and colorful meal that serves 9-12, depending on appetities. If there are any casserole leftovers, they are easiliy reheated in the microwave later - simply heat on high for about 1 to 1 1/2 minutes per serving on a microwave safe plate, covered. (Tip: The tortilla chips will soften in the refrigerator. If you'd like to add more broken tortilla chips for that nice crunchy topping, heat an individual serving for 1 minute, then add some more broken tortilla chips topped with a little more shredded cheese if desired, and heat for 30 seconds more.)

- 1 1/2 lbs. lean ground beef, pork, turkey or chicken
- 1/4 cup taco seasoning mix
- 1 15-oz. can pinto beans, drained and rinsed
- 1 15-oz. can corn (yellow or white)
- 1 15-oz. can tomato sauce
- 1 3/4 cups shredded cheddar cheese, divided
- 1 1/2 cups coarsely broken tortilla chips
- Garnishes (optional)

Directions
Preheat oven to 400° F.
In a large skillet, brown meat over medium-high heat, crumbling into bite-size pieces while cooking. Once browned, drain any grease from skillet.
Stir in taco seasoning mix, beans, corn and tomato sauce. Bring mixture to a boil, then reduce heat to low and simmer (covered loosely) for 5 minutes.
Spoon the mixture into a 9x12-inch (or similar size) and evenly spread around. Sprinkle top evenly with 1 1/2 cups of cheese, then cover evenly with tortilla chips. Sprinkle remaining 1/4 cup of cheese over chips.
Place in oven and bake for 10-15 minutes, or until heated through and bubbly. Serve hot with assorted garnishes listed above, if desired.
