Easy Taco Casserole with Tortilla Chips

Tips:  Ground turkey, ground chicken, ground pork or ground beef may be used.
Suggestion:   Delicious served with sides of sour cream, avocado slices, chopped tomatoes, shredded lettuce and/or sliced green onions..
Ingredients
  • Casserole
  • 1 1/2 lbs. lean ground beef, pork, turkey or chicken
  • 1/4 cup taco seasoning mix
  • 1 15-oz. can pinto beans, drained and rinsed
  • 1 15-oz. can corn (yellow or white)
  • 1 15-oz. can tomato sauce
  • 1 3/4 cups shredded cheddar cheese, divided
  • 1 1/2 cups coarsely broken tortilla chips

Directions
Casserole

Preheat oven to 400° F.

In a large skillet, brown meat over medium-high heat, crumbling into bite-size pieces while cooking. Once browned, drain any grease from skillet.

Stir in taco seasoning mix, beans, corn and tomato sauce. Bring mixture to a boil, then reduce heat to low and simmer (covered loosely) for 5 minutes.

Spoon the mixture into a 9x12-inch (or similar size) and evenly spread around. Sprinkle top evenly with 1 1/2 cups of cheese, then cover evenly with tortilla chips. Sprinkle remaining 1/4 cup of cheese over chips.

Place in oven and bake for 10-15 minutes, or until heated through and bubbly. Serve hot with assorted garnishes listed above, if desired.
