Pork Chops with Apple Cider Glaze

Pork chops are known to go famously well with a side of applesauce. Something about the flavors of pork and apples served together just seem to create the perfect
balance of flavor and texture. The tanginess of Dijon mustard is also a great flavor to add to sauces and marinades when it comes to pork. Pork Normandy combines pork with slices of apples and a sauce also made with Dijon mustard, and is amazingly delicious. This tasty grilled pork recipe features a basting sauce made with apple cider, apple jelly, Dijon mustard and some red pepper flakes to give the sauce a lively "kick." The pork chops are lightly brushed with olive oil and seasoned with salt, pepper, garlic and red pepper flakes as well. This is an exceptionally easy barbecue dish to prepare, with the basting sauce taking a few minutes on the stove (while it reduces) and the pork chops taking only about 15 minutes on the grill. Ingredients
- 2 boneless or bone-in pork chops
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/8 teaspoon granulated garlic
- 1/8 teaspoon red pepper flakes
- Apple Cider Glaze
- 1/2 cup apple jelly
- 1/4 cup apple cider
- 1/4 teaspoon red pepper flakes
- 1 tablespoon Dijon mustard
Directions
Prepare a charcoal fire or gas grill so the coals can heat up while you are preparing the glaze and pork chops..
Place apple jelly, apple cider and red pepper flakes in a small saucepan. Gently whisk together while bringing to a boil and cook until liquid has reduced to 1/2 cup. Once reduced, whisk in Dijon mustard. Turn off heat, allowing saucepan to sit on burner to keep warm while preparing the pork chops.
Rub pork chops with olive oil, then sprinkle with salt, pepper, garlic and red pepper flakes.
Grill pork chops over medium-hot coals for about 7 minutes per side or until cooked to taste. Liberally baste both sides of pork chops with Apple Cider Glaze while cooking, basting one last time just before removing them from the grill. Serve.
