Ingredients
- Dressing
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons orange juice
- 3 tablespoons finely chopped pecans
- 2 tablespoons honey
- salt and pepper (to taste)
- Salad
- 6 cups loosely packed baby mixed greens
- 1 apple pear or small other type of pear (ripe but fairly firm)
- 1/3 cup dried cranberries (or pomegranate seeds)
- 1/3 cup feta cheese (plain or herb flavored)
Directions
Dressing
In a small mixing bowl, whisk together olive oil, vinegar, orange juice, pecans, honey, and salt and pepper. Set aside.
Salad
To a salad mixing bowl, add baby mixed greens. Drizzle dressing over greens and toss gently to coat.
Divide the salad among 4 salad plates. Core pear, then slice in half vertically. Slice each half into 1/3-inch wide wedges. Top each salad serving decoratively with pear slices, then sprinkle over top with dried cranberries (or pomegranate seeds) and feta cheese. Serve immediately.
