Fruit and Wild Rice Salad
Yield: 8-12 servings
Cook Time: Depends on the type of rice used (cooking time is for rice only).
Tips: 1-2 cups of additional cooked rice may be added, if desired. Nectarines may be used instead of peaches, if desired. All green grapes, all red grapes or a combination of both may be used.
Suggestion: Delicious served with a side of rolls and butter.
This refreshing and colorful fruit and rice salad is perfect served with lunch, at picnics and parties, and is especially delicious on a hot summer day!
Fruit and Wild Rice Salad features chunks of fresh peaches, apricots, plums and grapes (you can use seedless green or red grapes or a combination of both as shown above) and wild rice (or a wild rice blend as shown in the photo). The salad is first tossed with a small amount of sugar, and is then combined with a light tangy and mildly sweet dressing made of freshly squeezed lime juice, a small amount of oil and a tad of sugar and bit of salt. It just doesn't get much easier than this! (Tip: For a more dramatic visual effect, using pure wild rice rather than a rice blend will create more vivid contrast, though wild rice can tend to be a little higher in cost than the rice blends.) This rice and fruit salad is the perfect summer salad when all these wonderful fruits are in season and found in abundance!

Ingredients
- Salad
- 2 peaches, rinsed, pitted and chopped
- 2 plums, rinsed, pitted and chopped
- 2 apricots, rinsed, pitted and chopped
- 1 1/2 cups green seedless grapes (or a combination of red and green), rinsed and halved
- 4 cups cooked wild rice (or wild rice blend), chilled
- 1 tablespoons granulated sugar
- Dressing
- juice of 2 freshly squeezed limes
- 3 tablespoons salad oil
- 1 tablespoon sugar
- 1/2 teaspoon salt
Directions
Salad
In a large mixing bowl, combine peaches, plums, apricots and grapes. Add sugar and gently toss to combine. Add rice and toss gently just long enough to combine.Dressing
In separate small mixing bowl, combine lime juice, oil, sugar and salt and whisk for about 15 seconds or until thoroughly combined. Drizzle dressing over the fruit and rice and gently toss to thoroughly coat. Cover bowl and place in refrigerator to chill until ready to serve.
