Tips:   1 cup water and 1 chicken boullion cube or 1 teaspoon chicken bouillon may be used in place of chicken broth.

This quick and easy chicken chili recipe takes a short time to prepare and cook, yet delivers great, full flavor that will appeal to all ages! Some chili recipes require a good amount of time to simmer on the stove or in a slow-cooker (or crock pot), but that's not the case with this chicken chili recipe. While slow cooking certainly has a way of locking in powerful flavor (not to mention filling the entire house with incredible aromas), it's not the cooking method you'll want to use if you're short on time or simply want to prepare a meal in less than 30 minutes. If you've had a long day and don't want to spend a great deal of time in the kitchen, you should give some
serious consideration to trying this very tasty chicken chili recipe!

What makes this chili recipe so easy is that it calls for a few canned goods: Chicken breast, zesty chili-style tomatoes, black beans, crushed tomatoes, and some chicken broth (unless you'd rather simply add 1 cup of water to the chili along with a cube or teaspoon of chicken bouillon). Also, rather than adding a long list of spices and seasonings, you simply add a couple packets of chili seasoning mix along with a little cumin. The only effort you'll need to put into this chili recipe is the chopping of one onion. Simply sautè the onion with some olive oil in a soup pot until tender, then add the other ingredients and simmer for 15-20 minutes. So easy!

What really takes this chicken chili over the top is the addition of some fun toppings that can add flavor, crunch and/or texture. The photo above shows this chili topped with shredded cheddar cheese and a dollop of sour cream, though more toppings can be added, including crumbled tortilla chips (or corn chips), sliced black olives, chopped fresh cilantro, or even corn kernels. Slices of lime wedges can also be served on the side for a little kick of tangy festive flavor.

Ingredients

  • Chili
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3-15 oz. cans black beans, rinsed and drained
  • 2 14.5 oz. can diced zesty chili-style tomatoes
  • 1 30-oz. can crushed tomatoes
  • 1 cup chicken broth (or 1 cup water plus 1 cube or teaspoon chicken boullion)
  • 2 12.5-oz. cans chunk chicken breast, undrained
  • 2 1.25-oz. packages chili seasoning mix
  • 1 teaspoon ground cumin
  • salt and pepper to taste

  • Toppings (optional)
  • shredded cheddar cheese
  • chopped fresh cilantro
  • sour cream
  • lime wedges
  • corn kernels
  • sliced black olives
  • chopped red onions
  • crumbled tortilla chips or corn chips

Directions

In a large soup pot, heat olive oil over medium heat. Once oil is hot, add onion and cook until tender (about 7 minutes), stirring frequently. Stir black beans, diced tomatoes, crushed tomatoes, chicken broth, chicken breast, chili seasoning, cumin, salt and pepper, breaking up large pieces of chicken until shredded. Bring to a boil, then immediately reduce heat to low-medium and simmer for about 15-20 minutes. If desired, serve with any choice of toppings listed above.
