Coleslaw doesn't have to be limited to just cabbage and carrots! This Cauliflower and Broccoli Slaw recipe is a perfect example of an alternative style coleslaw with vibrant color, satisfying textures as well as valuable nutritional health benefits.
This colorful vegetable coleslaw recipe features a mixture of cauliflower and broccoli florets, shredded carrots, thinly sliced red cabbage and red onions. These fresh ingredients are tossed with a creamy Zesty Ranch Dressing made with buttermilk, sour cream, mayonnaise, prepared horseradish and rice wine or rice vinegar, giving it that special "zing."

This tasty coleslaw recipe includes a blanching process for the broccoli florets to bring them to a more crisp-tender state, which makes them easier to chew as well as digest. However, if you prefer to use raw broccoli, you can simply skip the blanching process. Whichever method you choose, this Cauliflower and Broccoli Slaw recipe will not disappoint!

Ingredients

  • Slaw
  • 2 cups broccoli florets
  • 2 cups cauliflorets
  • 1/2 cup shredded carrots
  • 2 cups shredded red cabbage
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons fresh flat chopped parsley

  • Zesty Ranch Dressing
  • 1/2 cup buttermilk
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon prepared horseradish
  • 2 tablespoons wine or rice vinegar
  • 1 tablespoon sugar
  • 1/8 teaspoon pepper
  • 1/4 teaspoon salt

Directions

Heat a large sauce pan filled with about 1 inch of water until boiling. Place broccoli florets in a steamer tray and place in saucepan. Cover and steam for 2 minutes, then immediately remove broccoli and pour into a colander to drain. Quickly run cold tap water over broccoli to cool and stop cooking process (alternatively, you can put broccoli in a bowl of ice water). Thoroughly drain broccoli, then pat dry with paper towels.

Cut broccoli and cauliflower florets as necessary to ensure they are small, bite-sized pieces. Combine steamed broccoli and all other Slaw ingredients in a medium-sized mixing bowl and set aside.

In a small mixing bowl, whisk together all Zesty Ranch Dressing ingredients. Pour over mixed vegetables and toss gently to thoroughly coat. Cover and store in the refrigerator for 30 minutes or more and serve.
