Tilapia with Lemon Sauce and Capers

Tips: Leftovers are delicious briefly reheated in the microwave.
Suggestion: Delicious served with a potato side and/or other vegetable side.
Ingredients
  • 2 tablespoons oil
  • flour (for coating)
  • 4 6-oz. tilapia fillets
  • 1/4 cup diced onions
  • 1/2 cup butter
  • 1 1/2 tablespoons capers
  • 1/2 cup white wine
  • 1/2 cup lemon juice
  • salt and pepper to taste
  • 1/2 bunch flat leaf parsley, finely chopped
Directions
Heat oil in a large skillet over high heat (alternatively, you can
cook the fillets in 2 batches using a smaller skillet). Sear fillets until golden brown (about 3-4 minutes). Turn fillets and add onions. Cook briefly until onions become translucent. Add butter, capers, wine, lemon juice, salt and pepper.

Reduce heat to medium and simmer for about 5 minutes. Once the sauce has a smooth consistency, sprinkle chopped parsley over fillets.
