Thai Chicken Fettuccine

Cook Time: About 10 minutes
Tips: For added spice, add 1/4-1/2 teaspoon of Chili Garlic Sauce (found with Asian spices in grocery stores). If prefered, you can also stir in 1/4 cup of peanuts for added flavor and crunch.
Suggestion: Garnish with chopped cilantro, if desired. Delicious served with
vegetables or a
salad and/or side of
bread.
Ingredients
- 1 tablespoon olive oil
- 1 lb. boneless, skinless chicken breast (about 2 breasts), thinly sliced
- 1 cup picante sauce
- 1/4 cup chunky peanut butter
- 2 tablespoons honey
- 2 tablespoons orange juice
- 1 teaspoon soy sauce
- 1/2 teaspoon ground ginger
- 3 cups hot cooked fettuccine
- chopped fresh cilantro for garnish (optional)
Directions
In a medium mixing bowl, whisk together picante sauce, peanut butter, honey, orange juice, soy sauce and ginger. (Note: If you prefer a little spice, add 1/4-1/2 teaspoon chili garlic sauce, taste-testing as you add to reach desired spiciness). Set aside.
Heat oil in a skillet over medium-high heat. When oil is hot, add chicken and cook, stirring frequently until lightly browned (about 5 minutes). Add sauce (and peanuts if you are using) to the chicken and stir until fully mixed. Add fettuccine to chicken mixture and toss until evenly coated. Garnish servings with chopped cilantro and/or cilantro sprigs if desired.
