Tips: The orange used for orange zest may also be used to create fresh squeezed orange juice - though it is likely another orange (or prepared orange juice) will be needed to produce enough orange juice for the recipe.
Suggestion: Delicious as a mildly sweet dessert or snack accompanied by coffee or hot tea.
Cinnamon Crumb Cake (also sometimes referred to as Cinnamon Coffee Crumb Cake or Coffee Cake with Cinnamon Crumb Topping) is a mildly sweet cake that has a soft and spongy texture and a crumbly topping that's traditionally made with flour, butter, sugar and cinnamon. This particular recipe for Orange Cinnamon Crumb Cake features the addition of orange zest and orange juice to the cake batter, which gives this cake a nice hint of fresh citrus flavor as well as enhanced vibrant color. (Tip: For fresh orange flavor, you can opt for making your own fresh squeezed orange juice by squeezing
juice from the orange you used for the orange zest (also known as orange peel). Keep in mind, however, that one orange may not produce enough orange juice for the recipe (unless the orange is very large), so you should probably buy 2 oranges if you'd like to make your own fresh squeeze orange juice.) You can also use prepared orange juice for this recipe, whether from a can of frozen orange juice concentrate or orange juice that has already been prepared and packaged in a bottle or carton, though you'll still need a small orange for the orange zest. The cinnamon crumb topping for this cake is as easy as ever to make, because the ingredients are borrowed from the cake mixture (a simple mixture of butter, flour and sugar) before the wet ingredients have been added . A teaspoon of cinnamon is added to the topping mixture, and the crumbly topping is sprinkled over the top of the cake just before placing in the oven. This Orange Cinnamon Crumb Cake is one of the best cakes to bake when you're in the mood for something quick and easy, light and mildly sweet, and is always perfect when accompanied by a cup of coffee or hot tea.

Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 4 tablespoons butter, at room temperature
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- dash of salt
- 1 large egg
- 1/2 cup orange juice
- 1 teaspoon finely grated orange zest (peel)
Directions
Preheat oven to 350° F. Grease and flour an 8-inch-square baking pan.
Add flour, sugar and butter to a medium-sized mixing bowl and blend using a pastry blender or fork until the mixture resembles coarse meal.
Measure 1/2 cup of the flour, butter and sugar mixture and pour into a separate small mixing bowl. Add cinnamon and whisk or stir with fork to combine. Set aside.
To the flour, sugar and butter mixture in the larger mixing bowl, add baking powder and salt and whisk or stir with a fork to combine.
In another separate small mixing bowl, whisk (or beat with a fork) egg with orange juice and orange zest until well blended. Using a fork, stir the egg and orange juice mixture into the dry cake ingredients in the larger bowl, sitrring just until evenly moistened. Pour cake batter into the prepared baking pan.
Sprinkle the reserved cinnamon crumb topping mixture evenly over the batter in the baking pan. Place in oven and bake for 20-25 minutes, or until a toothpick inserted into center of cake comes out clean. Allow cake to sit for 2-3 minutes before slicing and serving.
