Hominy Casserole is a quick and easy skillet recipe that can be whipped together in only 10 minutes! This vegetable dish can be served as a side dish or a main course if you're looking for a main dish that contains no meat.
This creamy and cheesy vegetable casserole is made with hominy (you can use either yellow or white hominy), cheddar cheese, onions, diced green bell peppers and sliced ripe or green olives. The olives are optional, but I highly recommend using them, because they add complimentary flavor. The creaminess is created by a little flour and milk, and a little spice is added with a dash of hot pepper sauce (such as Tabasco). The hot pepper sauce is also optional, but I recommend this as well, because this will add flavor, and the spice from the pepper sauce is virtually undetectable. Hominy are large kernels of corn (also known as "maize"). They have a delightfully different flavor and texture than smaller corn kernels and can be prepared in a large variety of ways, such as soups, stews, casseroles, chili, fried dishes and hominy grits.

Ingredients

  • 1 small onion, chopped
  • 1/2 cup diced green bell pepper
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 3/4 cup milk
  • dash hot pepper sauce (optional)
  • 1/2 cup shredded cheddar cheese
  • 1 (1-lb) can hominy (yellow or white), drained and rinsed
  • 1/4 cup ripe or green stuffed olives, chopped (optional) paprika

Directions

In a small mixing bowl, whisk together flour, salt and dry mustard and set aside. In a large skillet, sauté onion and bell pepper in butter until tender (about 3-4 minutes). Add flour mixture to onion and bell pepper and mix until combined. Add milk and increase heat to medium. Cook until sauce thickens (about 2-3 minutes). Add hot pepper sauce and shredded cheese, stirring gently until cheese melts. Add hominy and olives and stir gently to combine. Cook on medium low until heated through. Lightly sprinkle dished servings with paprika for color and flavor.
