Curry Salad Dressing

Suggestion: Delicious as a dressing with spinach salad and other leafy green salads.
Curry Salad Dressing is a light and very tangy dressing,and tastes fabulous as a spinach salad dressing or a salad dressing for any other type of leafy green salad. It also can be tossed with pasta salad, or lightly drizzled over fresh tomatoes or assorted cooked or raw vegetables. This salad dressing can also be used as a marinade with chicken, or simply brushed over chicken while grilling, or
can be lightly drizzled on bread for additional flavor in sandwiches (as some like to do with Italian and Caesar dressings in sandwiches).
Curry Salad Dressing is flavored with chutney and curry powder, both which are ingredients commonly used in the preparation of Indian food. Chutney is an Indian condiment that can be found packaged in glass jars, and comes in a variety of flavors, including mango, coriander, dates, tamarind and even garlic. (Tip: You might have more luck finding assorted chutney in grocery stores specializing in Indian food.) Any flavor of chutney will work with this salad dressing, so choose a flavor that personally appeals to you. Curry Salad Dressing can be slightly adjusted to suit your personal taste. For instance, if you prefer a little more sweetness in the dressing, simply add a small amount of additional granulated sugar (try adding only 1/4 of a teaspoon, as a little goes a long way). On the other hand, if you prefer a little more spice, simply add a few more drops of red pepper sauce (such as Tabasco). Curry Salad Dressing can be stored at room temperature for a week or two.

Ingredients
- 1/2 cup white wine vinegar
- 2/3 cup salad oil
- 1 tablespoon chutney (any flavor)
- 1 teaspoon curry power
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 1 teaspoon dry mustard
- 1/4 teaspoon hot pepper sauce (such as Tabasco)
Directions
Combine all ingredients in a mixing bowl and whisk until well blended. Cover and allow to sit at room temperature for 1-2 hours to allow flavors to blend. Serve with spinach salad, other leafy green salads or with pasta salads.
