Cashew Oatmeal Bars
Yield: 15-24 servings, depending on size of squares cut.
Cook Time: 23-30 minutes
Tips: Remove from oven as soon as edges begin to turn golden brown.
Suggestion: Delicious served as a healthy dessert, a Christmas dessert or a healthy snack anytime.
Have you ever heard someone say, "If it's called a healthy dessert, then it probably doesn't taste very good." I suppose that's largely dependent on how potent of a sweet tooth one has. To test this healthy dessert myth, I shared these Cashew Oatmeal Bars with some of my neighbors, telling them that these cookie bars leaned on the healthy side. I shortly after received my neighbors' feedback, and all of them agreed - that these cookie bars did not taste healthy - in other words, they seemed too delicious to be healthy!
What makes these homemade oatmeal bars healthier than most cookie bars is the
fact that they're made with a variety of wholesome ingredients, such as whole wheat flour, sweetened dried cranberries, old fashioned oats and chopped cashews. Also, rather than being sweetened with granulated sugar, they're sweetened with honey and brown sugar (the honey adds a touch of healthiness, while the brown sugar gives these oatmeal bars added flavor and a delightful chewy texture). The chocolate chunks in these oatmeal bars are semi-sweet, which also tends to lean more on the healthy side than milk chocolate, because dark chocolate has more nutritional value than milk chocolate. The semi-sweet chocolate also blends perfectly with the other ingredients in these cookie bars!
As with most cookie bar recipes, these Cashew Oatmeal Bars have quite a bit in common with oatmeal cranberry cookies or other varieties of oatmeal cookies. The great thing about cookie bars is how easy they are to make, because there's no need for measuring out separate lumps of dough for each cookie. Simply pour the batter into a casserole dish, bake, then slice into squares! Cashew Oatmeal Bars are always perfect for any occasion. Ingredients
- 3/4 cup whole wheat flour
- 3/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1 stick (1/2 cup) butter, at room temperature
- 1/2 cup honey
- 1/3 cup packed brown sugar
- 2 large eggs
- 3/4 cup old fashioned oats
- 1/2 cup sweetened dried cranberries
- 4 ounces bittersweet chocolate, coarsely chopped
- 1 cup roasted and salted cashews, coarsely chopped
Directions
Preheat oven to 350° F. Butter and flour a 13x9-inch baking pan.
In a mixing bowl, sift together whole wheat flour, all-purpose flour, cinnamon and salt. Set aside.
In an electric mixer bowl, cream butter, honey and sugar until light and fluffy. Beat in eggs, one at a time, until fully incorporated and mixture is smooth. Add sifted ingredients and mix until just blended, stopping once to scrape sides and bottom of bowl to incorporate all ingredients. Remove mixer bowl from electric mixer using a wooden spoon or stiff rubber spatula, fold in oats, cranberries, chocolate and cashews. Mixture will be very stiff.
Spread mixture evenly in the prepared baking pan (using the back side of a large spoon might be helpful). Bake for 23-30 minutes, or until light golden brown (do not overbake, as cookie bars will become less chewy).
Allow to cool for 10 minutes, then cut into squares.
