Chocolate Chip Cookies

Tips:   Removing cookies from oven when they still appear slightly under-cooked in center will ensure a chewy cookie. For chocolate lovers, chocolate chips may be increased to 3 cups, which is convenient for those who buy the extra-large bags of chocolate chips from warehouse stores.
Ingredients
  • 1 cup plus 2 tablespoons whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 cup (2 cubes) butter, softened
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 11.5-oz. bag chocolate chips (semi-sweet or milk chocolate)
Directions
Preheat oven to 350° F.

In a medium mixing bowl, whisk together flours, salt and soda. Set aside.

In an electric mixer bowl, combine butter, sugars and vanilla and mix until smooth. Beat eggs lightly in a separate small bowl, then add to sugar and butter mixture. Mix just until mixture is blended. Add flour mixture to sugar and butter mixture and mix on medium speed just until blended (Note: Do not over mix! Over-mixing can make cookies too floury.) Remove from electric mixer bowl, and manually stir in chocolate chips.

Using two spoons or a a cookie dough scooper tool, form 1 1/4-inch balls and place on cookie sheets about 2 inches apart. Press down cookie dough balls very slightly with fingers to flatten so they are not shaped like balls (this will help cookies to not become too puffy while baking).

Bake for 9-11 minutes, or just until edges start to turn golden brown. Cookies might look a little undone in the very center, but this is what makes them so chewy! Allow to cool for about 1 minute, then transfer cookies with a spatula to a cooling rack.
