Suggestion: If desired, serve this pie ala mode with a scoop of vanilla ice cream.
Preheat oven to 375°F. Lightly butter or coat an 8 or 9-inch glass pie pan with nonstick cooking spray.
In a medium
mixing bowl, whisk together oats, flour, brown sugar and baking soda. Add melted butter and stir until well-blended. Set aside 3/4 cup fo the oat mixture for topping the pie later. Press the remaining oat mixture firmly onto the bottom and sides of the pie pan. Bake for 10-12 minutes, or until crust turns light golden brown. Remove from oven and place on a wire rack to cool slightly.
Using the same mixing bowl, stir together the pie filling, cranberries, lemon juice and cinnamon. Spoon the filling evenly over the hot crust. Sprinkle the reserved oat topping evenly over the top of the pie filling.
Bake for 18-22 minutes, or until the topping turns golden brown. Serve warm or at room temperature, topped with vanilla ice cream if desired.
